A simple, elegant recipe to bring the coast to your table

Ingredients (Serves 2–4)

  • 1 pound large sea scallops, patted dry
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • Sea salt and freshly ground black pepper, to taste

Directions

1. Prepare the scallops

Rinse scallops under cold water, then pat thoroughly dry with paper towels. This step is essential for achieving a golden crust. Season both sides with sea salt and pepper.

2. Sear the scallops

Heat the olive oil in a large skillet over medium-high heat until shimmering. Add scallops, leaving space between each one. Sear for 1½ to 2 minutes per side, or until a golden crust forms. Remove scallops from the pan and set aside.

3. Make the lemon herb butter

Lower the heat to medium. Add butter to the skillet and allow it to melt. Stir in garlic and cook for 30 seconds. Add lemon zest, lemon juice, parsley, and chives. Stir until fragrant.

4. Combine and serve

Return scallops to the skillet for a quick toss in the sauce, just long enough to coat. Serve immediately, spooning extra lemon herb butter over the top.
