The over-oaked, buttery and high-alcohol examples made popular in the 80s and 90s are still prevalent in the market today. Oceano produces refreshingly vibrant wines naturally lower in alcohol, reflecting the vineyard site— cool ocean breezes, coastal fog and seafront soils. We are focused on making our wines as sustainable as possible and running our business socially responsibly.”

The first step for sculpting wine is choosing the stone, the vineyard site. Spanish Springs Vineyard offers a complex mix of sandstone, shale, and limestone at the base, with soils reflective of these same sedimentary rocks. This gives us a great springboard.
The next step is to understand the grapes and choose the chisel to highlight what sets the site apart. To capture and maintain the exceptional natural acidity in the chardonnay, the sculptor must use the gentlest press so we don’t extract harsh phenolics and excessive oxidation. With pinot noir, precise fermentation temperature control and sensitive cap-management techniques are crucial to capturing the delicate floral and red fruit aromas.
The last ingredient is adaptability. Every vintage imparts its own characteristics, and “tools” that worked in prior vintages may not work in others. The ability to adjust the plan to capture the delicate aroma and flavor compounds takes foresight, instinct, technical understanding, and experience. With this approach, Oceano Wines will confidently reflect the best the vintage and site has to offer each year.
SPANISH SPRINGS VINEYARD
Perched on the slopes of Price Canyon, Spanish Springs Vineyard is closer to the Pacific Ocean than any other wine vineyard in California. This superb location is ideal for growing chardonnay and pinot noir grapes. The ocean fog and marine breezes cradle and nurture the developing fruit, protecting them from the harsh sun. Our unique climate ensures that the grapes never over ripen, yielding premium wines that are vibrant and with a naturally lower alcohol content.
