OUR WINEMAKING PHILOSOPHY
The first step for sculpting wine is to choose the stone, which is the vineyard site. Spanish Springs Vineyard offers a complex mix of sandstone, shale, and limestone at the base, with soils reflective of these same sedimentary rocks. This gives us a great springboard.
SPANISH SPRINGS VINEYARD
Perched on the slopes of Price Canyon, Spanish Springs Vineyard is closer to the Pacific Ocean than any other vineyard in California. This superb location is ideal for growing chardonnay and pinot noir grapes. The ocean fog and marine breezes cradle and nurture the developing fruit, protecting them from the harsh sun. Our unique climate ensures that the grapes never over ripen, yielding wines that are vibrant and with a naturally lower alcohol content.
As viticulturists and winemakers, we are keenly aware of the impact we have on the world. We use sustainable farming practices and renewable energy to lessen our impact and become as carbon neutral as possible. We understand the need to practice sustainability, not just for our winemaking, but for all of our futures. The next step is to understand the grapes and choose the chisel to highlight what sets apart the site. To capture and maintain the exceptional natural acidity in the chardonnay, the sculptor must use the gentlest press so we don’t extract harsh phenolics and excessive oxidation. With pinot noir, in order to capture the delicate floral and red fruit aromas, precise fermentation temperature control and sensitive cap-management techniques are crucial.
