Five Spice Brine

For the brine you will need:

  • 4 cups water
  • ¼ cup Kosher salt
  • ¼ cup sugar
  • 1 tablespoon Chinese 5 spice powder
  • 1 tablespoon dried black peppercorns

Combine all the ingredients in a saucepan and bring the contents to a boil. After 5 minutes, remove the brine from the heat and let it cool to room temperature.

Pork Chop and Dijon Cream Sauce

To create this dish for two, you will need:

  • 2 boneless pork chops, each 6-8 ounces
  • 6 tablespoons butter, divided into 4 ounces and two ounces
  • 1 tablespoon all-purpose flour
  • 2 ounces Oceano Pinot Noir wine
  • 3 tablespoons milk
  • 1 heaping tablespoon Dijon mustard

Step 1:

Place the pork chops in the brine of the pork chop seasonings and refrigerate for at least 8 hours. When ready to cook, remove the pork chops from the brine and pat dry with paper towels.

Step 2:

Preheat the oven to 350 degrees F. Heat an oven proof cast-iron skillet over a high flame, add 2 tablespoons butter, and pan sear each side of pork chop for approximately 3 minutes until browned.

Step 3:

Place a cast iron skillet into the oven and bake the pork for approximately 8 to 9 minutes. Remove the skillet from the oven, being careful with the hot handle. Transfer the pork chops to a clean plate.

Step 4:

Return the skillet to the stovetop over medium flame. Add the remaining 4 tablespoons of butter to the pan and sprinkle 1 tablespoon of flour while whisking constantly. Add Oceano’s best Pinot Noir wine and continue to whisk until thickened and slightly reduced. Add the milk and the mustard, whisk for 1 minute, then remove from heat.

Top the spice brined boneless pork chop with the Dijon Cream sauce to serve. Add your favorite side dishes, and don’t forget to pour yourself and your dinner companion a refreshingly crisp glass of Oceano Pinot Noir!
