Our Vineyard’s Location
Perched on the slopes of Price Canyon, Spanish Springs Vineyard is closer to the Pacific Ocean than any other wine vineyard in California. Our vineyard is planted in ancient seabed solis, comprised of marine shale, limestone, sandstone and fossilized shells.
This superb location is ideal for growing Chardonnay, Pinot Noir, and Syrah grapes. The unique San Luis Obispo weather, with its ocean fog and marine breezes, cradles and nurtures the developing fruit, protecting them from the harsh sun. Our unique climate ensures that the grapes never over-ripen, yielding premium wines that are vibrant and naturally lower in alcohol.
San Luis Obispo is now an official American Viticultural Area (AVA), recognizing the distinct characteristics that our coastal vineyards contribute to our wines. This designation highlights the exceptional quality of our vineyard, which plays a crucial role in producing the best Pinot Noir and best Chardonnay.
Our Winemaking Philosophy
The first step in sculpting wine is choosing the stone, the vineyard site. Spanish Springs Vineyard offers a complex mix of sandstone, shale, and limestone at the base, with soils reflective of these same sedimentary rocks. This gives us a great springboard.
The next step is to understand the grapes and choose the chisel to highlight what sets the site apart. To capture and maintain the exceptional natural acidity in our Chardonnay wine, the sculptor must use the gentlest press to avoid extracting harsh phenolics and excessive oxidation. With our Pinot Noir, precise fermentation temperature control and sensitive cap-management techniques are crucial to capturing the delicate floral and fruit aromas of this exceptional red wine.
The last ingredient is adaptability. Every vintage imparts its own characteristics, and the “tools” that worked in prior vintages may not work in others. The ability to adjust the plan to capture the delicate aroma and flavor compounds takes foresight, instinct, technical understanding, and experience.
